1. Stir-fried Squid with Curry
Ingredients:
500g fresh squid (cuttlefish): Wash thoroughly, cut into square pieces and make vertical incisions on each piece.
1 onion: Peel and slice into small wedges.
2 teaspoons curry powder.
1 teaspoon minced garlic and chili.
A few sprigs of cilantro.
Seasoning: oyster sauce, fish sauce, pepper, MSG, sugar, seasoning powder, and cooking oil.

Instructions:
Step 1: Marinate the squid with curry and spices (one teaspoon of each, except for pepper, which should only be about 1/3 teaspoon) for about 15 minutes.
Step 2: Heat oil, sauté the onion quickly, then add the marinated squid and stir well. Sauté the squid for about 4 minutes, adjust seasoning, and turn off the heat.
2. Sweet and Sour Stir-fried Squid
Ingredients:
300g fresh squid (cuttlefish): Wash, cut into small pieces and make horizontal and vertical incisions on each piece.
1 onion: Peel and slice into wedges.
1 tomato: Wash and slice into wedges.
1/4 pineapple slices: Remove core and slice into small pieces.
1 cucumber: Cut in half, remove seeds and slice diagonally.
A few celery stalks: Remove roots and cut into pieces about 1/2 finger length.
1/2 yellow bell pepper and 1/2 green bell pepper: Cut into squares.
10g straw mushrooms: Wash, soak in salt water and cut in half.
1/2 teaspoon each of: minced garlic and onion.
1/2 cup white wine.
Seasoning: fish sauce, oyster sauce, seasoning powder, and cooking oil.

Instructions:
Step 1: Marinate fresh squid with a little salt and seasoning for about 10 minutes.
Step 2: Sauté the onion and garlic until fragrant, then add the squid and stir-fry quickly. Transfer to a plate and set aside.
Step 3: Add a little oil to the pan, sauté the onion until fragrant, then add the onion, cucumber, straw mushrooms, bell peppers, and pineapple in turn and stir-fry evenly.
Step 4: When the ingredients are almost cooked, add the squid and stir well. Season with oyster sauce, a little fish sauce, and seasoning.
Step 5: Just before turning off the heat, add the celery to the top to allow it to cook gradually without stirring.
Sweet and sour stir-fried squid always makes for a delicious and warm family lunch.
3. Grilled Squid with Fermented Tofu Sauce
Preparation:
1 kg fresh squid (use only the body, keep the head separate): cut each squid in half
1/2 jar of white fermented tofu sauce and 1/2 jar of red fermented tofu sauce
5 ml lemon juice
A few perilla leaves, shredded
5 ml sesame oil
Pickled vegetables including lotus root, onion, and shallots.
Seasoning: garlic, aromatic wine, chili sauce, sugar, chili paste
Steps to make grilled squid with fermented tofu sauce

Instructions:
Step 1: Marinate the squid with red fermented bean curd, 1 teaspoon of aromatic wine, 1 teaspoon of fish sauce, garlic, and sesame oil. Marinate for about half an hour.
Step 2: While waiting for the squid to absorb the marinade, mash the white fermented bean curd and mix in some chili paste, lemon juice, and a little sugar to taste.
Step 3: For the accompanying vegetables, simply mix shredded perilla leaves, pickled shallots, and onions together.
Step 4: When the charcoal grill is glowing, place the squid on the grill. Turn regularly to prevent burning.
This squid dish is suitable as a snack or appetizer for weekend gatherings with friends.
4. Fried Squid

2 eggs
200g flour
100g breadcrumbs
350g breadcrumbs
30ml soy sauce
50ml ketchup
50ml mayonnaise
Seasoning: white wine, pepper, salt, seasoning powder, and cooking oil
