Fragrant Snails and Simple, Easy-to-Make Delicious Dishes
Fragrant snails have long been considered a top-tier delicacy among seafood specialties. As the name suggests, this type of snail is special primarily because even when fresh, it emits a naturally appealing aroma.

Stir-fried Fragrant Snails with Lemongrass and Chili
Ingredients:
Fragrant snails, chili peppers, lemongrass, garlic, onion, ginger, cooking spices.
Preparation:
Soak the snails in rice water for about 1-2 hours to allow them to release all the dirt. Then wash the snails thoroughly.
Chop the chili peppers, lemongrass, garlic, onion, and ginger finely.

Instructions:
Boiling the snails: Add water to the washed snails, just enough to cover them.
Add ¼ tablespoon of salt and some chopped, crushed lemongrass and cook until the water boils. Remove the snails.
Heat a pan with a tablespoon of oil, then add the chopped lemongrass and stir well.
Add minced garlic, minced onion, minced ginger, and minced chili peppers, mixing well until fragrant. Then, add the boiled snails to the mixture.
Season with ½ tablespoon of sugar, ¼ tablespoon of ground pepper, 1 tablespoon of fish sauce, and ½ tablespoon of chili paste, stirring well for about 2 minutes to allow the snails to absorb the seasoning.
